Quick Wok Magic: Authentic Chinese Fried Rice at Home

Cooking expedition taught me one thing: making various cuisines is easy, just follow the recipe, and pour your heart it would taste the best. I am not big on non-veg, yet when it comes to the classic Chinese fried rice, I’m game, be it making or eating one of my favorites. Today, we will see two such rich and flavourful recipes for easy Chinese at home. 

What's necessary is maintaining the authentic taste, so be mindful of the ingredients and the preparation process, as that might affect the richness and flavor of the dish. Without any delay, let's heat the pans and get started on making Chinese fried rice at home. 

How to Make Restaurant-style Chinese Chicken Fried Rice at Home:

This is the simplest dish, yet the key to any dish is the ingredients in proper measurements, so note the same, I will keep on mentioning where you can include add-ons, and will give you some special tips. 

  • Ingredients: (Serving 4)

    • Sesame oil (½ tbsp)

    • Shallots (6 peeled and cut into fourths or quarters)

    • Chicken (450g cubed and cooked)

    • Say sauce (3 tbsp)

    • Carrots (2 diced)

    • Celery (1 stalk diced)

    • Red bell pepper (diced)

    • Fresh peas (175g)

    • Canned corn (100g)

    • Rice (275g long grain rice cooked)

    • Eggs (2 scrambled)

  • Method:

    • Start with heating oil in a large skillet or any large vessel you have on a medium heat, but make sure it is comfortable for stirring. Add shallots and fry until soft, then add the chicken and 2 tbsp of soy sauce and stir it for 5-6 minutes. (The cooked chicken can be boiled or stir-fried. You can prepare this while cutting the vegetables.)

    • Once done, stir in carrots, celery, red bell pepper, peas, and corn, and stir-fry until soft or for a maximum of 5 minutes. Then add the rice and stir thoroughly. And adjust salt according to your taste, while cooking the chicken, salt is added. Soy sauce has a salty taste, so adjust accordingly.

    • Finally, stir in the scrambled eggs and the remaining tablespoon of the soy sauce, and serve hot immediately. 

How to Make Fried Rice With Shrimps:

Shrimps are my favorite. I rarely eat non-veg, but when I do, shrimps are a must on my menu, so today let's see how to make shrimp fried rice at home. 

  • Ingredients: (Serving 4)

    • Oil (Vegetable or peanut 3tsp)

    • Egg (1 lightly beaten)

    • Raw shrimps (100g shelled and deveined, cut into 2 pieces. Don't forget to devein the shrimp, which makes it easy to digest and enhances the taste.)

    • Scallions (2 tbsp finely chopped)

    • Rice (200g cooked and chilled)

    • Salt (according to taste) 

  • Method:

    • In a preheated wok or deep pan, heat 1 teaspoon of oil you have selected and pour in eggs, cook them to a scrambled consistency, and set them aside for later.

    • Do not change the vessel in the same wok. Add the remaining oil, and stir-fry cleaned raw shrimps and scallions for about 2 minutes on medium heat

    • Once the shrimps curl, uncrumble the rice and add it along with salt according to your taste. Cook for an additional 2-3 minutes until the rice and other ingredients are mixed, then stir in scrambled egg and serve hot.

    • Add soy sauce in the end if you like the deep flavor. I prefer spicy chili oil.
