Breakfast is the most important ritual of the day; it sets the tone, shapes the mood, and often decides how the hours ahead will feel. For me, a satisfying breakfast isn’t optional; if it’s missing, my entire day feels off-balance. My choices shift with the rhythm of the day, from simple bread sandwiches, poha, or idlis to indulgent English breakfasts, French toast, croissants, or falafels, depending on the time and mood for the day.
But Sunday mornings are different; they call for something slower, richer, and deeply comforting, an unhurried ritual meant to be savoured. And on such slow mornings, the assorted full English breakfast is my favourite. It is therapeutic to go through the whole making process and is my favourite mindful Sunday morning ritual.

Ingredients (Serves 2):
- 4 pork sausages (homemade sausage/chicken sausage/vegan sausage)
- 4 rashers of back bacon (Tofu/cottage cheese slices for veg and vegan version)
- 4 eggs (mashed potatoes/chickpea hummus with falafel for the vegan version)
- 1 cup baked beans (Navy beans/kidney beans)
- 2 tomatoes, halved
- 1 cup button mushrooms, sliced
- 2 slices of bread
- Butter or oil (olive oil/groundnut oil/coconut oil)
- Salt & black pepper

Method:
Cook the sausages:
- Heat a pan over medium heat with a little oil. You can use a normal fry pan or the tandoori grill pan as you prefer. I generally use the open toaster, which works the same, just pay attention.
- Fry sausages, turning occasionally, until golden and cooked through (12–15 minutes). If you are making the vegan sausages, you can make them at home or get vegan sausages from a supermarket or online. They also take about the same time.
Add bacon
- If you save utensil cleaning, use the same or a separate pan, cook bacon until crisp at the edges but still tender.
- For the vegan version, if you are using tofu or cottage cheese, grease them with a BBQ sauce and grill them slightly. They don't take much time to cook; about 2-4 minutes is enough.

Prepare vegetables
- Sauté mushrooms in butter until golden. Grill or pan-cook tomatoes cut-side down until softened and lightly charred.
- If you want to make it a brunch, just add in a few more greens like French beans, lettuce leaves, Arugula and spinach leaves (par-boiled), they go perfectly with the mashed potatoes and hummus falafel.
Warm the beans
- Heat baked beans gently in a small saucepan; do not boil.
- Well, my preparation of baked beans is slightly different. I generally boil them, then coat them with salt and pepper, bake them for 5 minutes for the crunchy taste and mix in some freshly made crushed tomatoes.
Cook the eggs
